Two old Farmer's Bulletins, instructional booklets published by the USDA, 1940s vintage and earlier.
These are #1415 Beef on the Farm - Slaughtering, Cutting, Curing (33 pages) and #1055 Country Hides and Skins - Skinning, Curing and Marketing (48 pages). #1415 has a few water spots, but both books are in nice shape overall.
